Phenolase has been extracted from apple peel preparations by the use of Triton X-100, and separated into two fractions on a DEAE-cellulose column. Since each fraction was homogeneous by starch gel electrophoresis and exhibited similar substrate specificities it was considered that they were isozymes.

SummaryWhen apples which develop low temperature breakdown (LTB) at 32° F. are moved from 32° F. to 65° F. for 3 to 5 days at about the 7th to 8th week of storage, they subsequently develop within a given period of storage less LTB than apples kept at 32° F. continuously. The respiration of apples susceptible to LTB increases steadily during storage at 32° F. If these apples are warmed to 65° F. during the period of exposure to 32° F., the subsequent rate of respiration at 32° F. is lower than before ...

The volatile aldehydes and ketones produced by whole Granny Smith apples at 30C. were identified by paper chromatography and spectral absorption of the dinitrophenylhydrazones, and by conversion of the aldehydes to hydroxamic acids. Acetaldehyde was found to be the major constituent, with smaller amounts of propionaldehyde and acetone.

Abstract The mineral composition of apple fruit seeds and stems has been determined to supplement similar information previously obtained for the flesh of apples. The stems are similar in composition to apple tree shoots and are especially rich in calcium. The seeds are especially rich in nitrogen and magnesium. Inclusion of stems and/or seeds in homogenised samples of apple fruit could result in considerable errors in estimations of some elements, particularly calcium, nitrogen and magnesium. Potassium ...

Abstract After treatment of apples with diphenylamine most of it was found in the peelings (1 mm thick) and was distributed approximately as follows: 60 % in the cuticle, 20 % in the epidermis, and 20 % in the hypodermis and cortex (assumed to be predominantly in the hypodermis). Treated apples lost 95 % or more of the original diphenylamine during 30 weeks' storage at 1°. A concentration in the peelings of about 0.2 μg/cm 2 appeared to be the minimum required to inhibit scald‐inducing reactions. Concentrations ...

SummarySamples of fruit from trees which had been spur pruned in winter or late summer, or regulated pruned, and which had also received nitrogen as ammonium sulphate in spring or sodium nitrate in late summer from 1968 onwards, were analysed in 1969 and 1970. Summer pruning raised the concentration of calcium but lowered that of potassium, phosphorus, nitrogen or dry matter. Large amounts of sodium nitrate applied in summer raised the concentration of calcium and phosphorus but not that of nitrogen. ...
