Abstract The objective of this study was to prepare a Frankfurter-type fish sausage with different levels of recovered proteins from Cape hake by-products and choose the optimum formulation using the response surface methodology. The simultaneous analysis of added-recovered protein (0–40%), pork fat (5–30%), and water (20–35%) on texture, color, and sensory evaluation was done. Two optimum formulations were determined: R1: 20% recovered protein, 5% pork fat, and 27.5% water; and R2: 20% recovered protein, ...

The chemical composition of maritime pine (Pinus pinaster) bark and of alkaline bark extracts has been investigated with bark from trees grown in Portugal. Bark is composed of lignin and polyphenolics (ca. 44%), polysaccharides (ca. 39%), dichoromethane, ethanol and water extractives (ca. 17%) and ashes (ca. 1%). The lignin content determined by the Klason method, after the extraction of polyphenolics (tannin-rich fraction) from the bark by alkali solution, is 33.2%. Cellulose content is about 24%. Hemicelluloses ( ...

Mercury (Hg) is the most highly toxic heavy metal, and must be removed from waterways to very low levels. Biologically mediated mercury removal is an emerging technology that has the potential to be robust, efficient and cost-effective. In this study, the impact of carbon source on the behaviour and microbial community composition of mixed microbial cultures was evaluated, and their performance was compared with a pure culture of Pseudomonas putida spi3. Glucose and acetate, two carbon sources that ...

Silicosis is a diffuse interstitial fibronodular lung disease, caused by the inhalation of crystalline silica. We undertook a brief review of the topic, focusing on the most important aspects and performed a retrospective analysis of 84 patients admitted to the Pulmonology Ward of the Coimbra University Hospital over a 10-year period whose main or secondary diagnosis was silicosis. We also present the most relevant clinical features and the conclusions drawn from this review. The authors assess ...

Microalgae represent an alternative and innovative source of natural ingredients that can be used in the development of novel food products. Biologically active compounds (e.g. carotenoids) are naturally encapsulated within microalgal cells, being able to resist harsh technological conditions involved in food technology processes. The aim of this work was to study the effect of adding Haematococcus pluvialis and Spirulina maxima microalgal biomass on the linear viscoelastic behaviour of vegetarian ...

A hybrid process targeting arsenic (As) removal from drinking water was developed in this study, consisting of arsenate transport through an anion exchange membrane followed by coagulation. The main advantage of this ion exchange membrane (IEM) process is improved drinking water quality through the prevention of secondary contamination by coagulants and pH-controlling agents, a design feature that was successfully confirmed experimentally. This study describes: (1) the selection of an appropriate anion ...

Different morphological regions of Hibiscus cannabinus plants grown in Portugal were submitted to chemical composition studies. General chemical composition was determined by established methods. The polysaccharides were fractionated by successive extractions of holocellulose with aqueous KOH solutions. The sugar composition was determined by hydrolysis of polysaccharides followed by gas chromatography (GC) analysis of neutral sugars and spectrophotometric determination of uronic acids. In situ lignins ...

The aim of this study was to investigate the effects of body condition (BC), BC changes, and plasma leptin concentrations on the reproductive performance of Lusitano broodmares on extensive systems. Data from 119 mares (ranging from 4 to 22 years of age) were collected over a period of four consecutive breeding seasons. Each case was considered as one foaled mare bred in 1 year. Body condition changes at conception (ΔBCScon) showed a strong effect on fertility at the first two postpartum estrous cycles ...

This work studied the effect of the substrate feeding composition on the polyhydroxyalkanoate (PHA) accumulation capacity of an acetate enriched photosynthetic mixed culture (PMC). From the six tested organic acids - malate, citrate, lactate, acetate, propionate and butyrate - only the three volatile fatty acids (VFAs) enabled PHA production, with acetate and butyrate leading to polyhydroxybutyrate (PHB) formation and propionate leading to a HB:HV copolymer with a 51% fraction of hydroxyvalerate (HV). Also, ...

Consumer's demand for functional food is a trend of the last decades. Nowadays, the attention is focused on the development of products with health claims on the label, which can result in value-added products for the producers companies. Cookies are popular staple foods in the human diet in many countries and are generally well accepted by consumers due to their sensory attributes, long shelf life and convenience. The incorporation of solid components on the biscuit dough, such as dietary fibre, ...

Mercury is a highly toxic heavy metal that causes human health problems and environmental contamination. In this study, an ion exchange membrane bioreactor (IEMB) process was developed to achieve Hg(II) removal from drinking water and industrial effluents. Hg(II) transport through a cation exchange membrane was coupled with its bioreduction to Hg0 in order to achieve Hg removal from concentrated streams, with minimal production of contaminated by-products observed. This study involves (1) membrane ...

Nowadays, as celiac disease is becoming more common the consumers’ demand for gluten-free products with high nutritional and taste quality is increasing. This work deals with the study of the impact of four novelty gluten-free sources: chestnut flour (Cf), whole rice flour (Rw), Carolino rice flour (Rc) and Agulha rice flour (Ra). Textural, thermorheological and stability performance of gluten-free gels using different experimental techniques were evaluated. Mixed gels were also produced for comparison. ...

This work studied the possibility of operating a viable polyhydroxyalkanoate (PHA) producing photosynthetic mixed culture (PMC) under dark/light periods without aeration. The culture was subjected to a feast and famine regime, being fed in the dark phase and entering into famine during the light phase. Throughout consecutive feast and famine dark/light periods, the PMC became enriched in PHA accumulating organisms, where non-PHA producing algae that can grow under continuous illumination were out- ...

For the first time, a mixed photosynthetic culture (MPC) consisting of a consortium of bacteria and algae was investigated for its capacity to accumulate polyhydroxyalkanoates (PHA). The culture was subjected to a feast and famine regime in an illuminated environment without supplying oxygen or any other electron acceptor. The MPC accumulated PHA during the feast phase and consumed it in the famine phase, where the PHA consumption was made possible due to oxygen production by algae. The internal cycling ...

Phytoestrogens exist in plants that are present in forages fed to horses. They may compete with 17-β estradiol and influence the estrous cycle. Therefore, the objective was to determine whether coumestrol from clover-mixed pastures is present in mare's plasma after their ingestion (experiment I), and when this phytoestrogen was present in mare's plasma after ingestion (experiment II). The effect of a long-term ingestion of phytoestrogens on estrous cycle disruption was assessed (experiment III; clinical ...

Chia (Salvia hispanica L.) seeds are considered a promising ingredient for the development of functional products owing to their high nutritional value: 343 g kg-1 lipids, 251 g kg-1 protein and 226 g kg-1 fibre. Considering chia's technological capacities, mainly the ability to swell when absorbing water and gel-forming properties, its addition to a food matrix can affect texture and rheological behaviour, acting as a texturing and stabilizing agent. The aim of the present work was to assess the ...
