This research was focused on a critical assessment of vacuum frying as a technology enabling minimization of acrylamide formation in potato crisps and reducing undesirable chemical changes that occur in frying oil at high temperatures. The potato slices were fried in rapeseed oil under vacuum at 125°C and atmospheric pressure at 165°C. The experiments were performed on two potato varieties, Saturna and Impala. Vacuum frying reduced the formation of acrylamide by 98% and also other Maillard reaction ...

Overall evaluation of the newly developed materials based on polybutylene succinate (PBS) and polybutylene succinate-co-adipate (PBSA) derived from renewable resources was carried out. This study was focused on the practical examination of two selected double layer materials - i) PBSA/(90% PBS + 10% PBSA) and ii) PBSA/(80% PBS + 10% PBSA + 10% talc), which were applied for vacuum packaging of raw chicken and turkey meat and smoked turkey meat. Physical, chemical and mechanical properties of these materials ...

This study examines the long-term impact of water management and navigation modifications on the hydromorphology of the lower Elbe River in Czechia. The research focuses on gravel-sand bars, which are remnants of the river’s natural morphology. The analysis revealed a significant shift in the hydromorphological quality of the river, evaluated using a morphological quality index and historical data. The study analysed morphological and grain-size parameters of selected gravel-sand bars, as well as ...
