Abstract We used a Combustion Aerosol Standard burner unit that affords controlled and adjustable flame conditions, and adapted it for use with liquid fuel. The reaction of HNO3 with decane (C10H22) soot generated in the laboratory has been studied in a Knudsen flow reactor. Two different types of soot were produced: Soot originating from a rich flame of decane and air ("grey" soot) and soot generated from a leaner flame of decane and air ("black" soot). Theoretical moisture and temperature evolution during cacao fixed bed drying were estimated with non-steady heat and mass transfer equation both in particle and bed. The model takes into account the cacao internal profiles and the air macroscopic balance of moisture, acidity and temperature. The results showed that the theoretical model predicts the experimental evolution of these state variables during cacao drying at three different conditions with average % of error lower than 18%.
