Multifunctional nanoparticles with magnetic and fluorescent properties have high potential in different areas. A very attractive feature of these nanoparticles is that they can be controlled by an external magnetic field and monitored by fluorescence. For biological applications, the magnetic nanoparticles (MNPs) must be biocompatible and dispersible in water, which requires surface modification. This paper describes the synthesis of Fe3O4 MNPs modified with three amino acids (AA): L-Tryptophan (Trp), ...

In the present work, we synthesize Near Infrared (NIR)-emitting alloyed mercaptopropionic acid (MPA)-capped CdTeSe quantum dots (QDs) in a single-step one-hour process, without the use of an inert atmosphere or any pyrophoric ligands. The quantum dots are water soluble, non-toxic, and highly photostable and have high quantum yields (QYs) up to 84%. The alloyed MPA-capped CdTeSe QDs exhibit a red-shifted emission, whose color can be tuned between visible and NIR regions (608–750 nm) by controlling the ...

The restructuring process offers to fish processors the opportunity to obtain new products, taking advantage of both low-value fish species and remains from filleting and other processing operations. However, mechanical and functional properties of restructured products depend on the biochemical and physicochemical properties of muscle proteins, mainly myosin and actomyosin. In this regard, the biochemistry of fish muscle is different from that of mammals and birds. Therefore, fish products must ...

The interest in safer raw fish products obtained by high pressure processing is increasing. However, the pressure (higher than 400 MPa) and time (1–5 min) needed to reduce the microbial load in muscle products denatures myofibrillar proteins and changes their mechanical, functional and visual properties. The objective for this study was to evaluate the stabilizing effect of sucrose, trehalose, sorbitol and their mixtures (1:1) on myofibrillar arrowtooth flounder (Atheresthes stomias) proteins subjected ...
