We perform the linear stability analysis for a new model for poromechanical processes with inertia (formulated in mixed form using the solid deformation, fluid pressure, and total pressure) interacting with diffusing and reacting solutes convected in the medium. We find parameter regions that lead to spatio-temporal instabilities of the coupled system. The mutual dependences between deformation and diffusive patterns are of substantial relevance in the study of morphoelastic changes in biomaterials. ...

The impact of stirring and homogenization on set yogurt production was assessed for fresh, refrigerated (4 days/7 °C) and frozen/thawed (1 month/-18 °C) sheep milk. Results showed that cold storage increased the fermentation time (>90min) and that yogurt from frozen/thawed milk was more sensitive to post acidification (50% higher pH drop) and had less firmness and adhesiveness (~25% lower). Adequate use of whey from sheep's milk cheese in smallholdings is a challenge. The possibility of producing a fermented dairy product manufactured by mixing sheep milk and whey at different concentrations was evaluated. The impact of freezing (1 month + thawing at 7 or 25 °C) and extended refrigeration (4 days, 7 °C) on physicochemical and microstructural characteristics of raw whole and skimmed sheep milk were assessed.
