ABSTRACT The contents of the 12 anthocyanins in crowberry juice were followed during storage at room temperature by varying the content of oxygen, ascorbic acid, Al 3+ and Fe 3+ ions. The half‐lives of the individual anthocyanins were 4–6 wk in untreated juice. When 90% of the oxygen had been removed, the stability improved by a factor 3–4. Volatile compounds of fresh, hot air dried and freeze dried dill (Anethum graveolens L.) herb were studied by gas chromatography-mass spectrometry. Of the 25 volatile components identified, 16 the most abundant compounds were analysed quantitatively. The major primary aroma compounds were α-phellandrene, 3,6-dimethyl-2,3,3a,4,5,7a-hexahydrobenzofuran,β-phellandrene, limonene, α-pinene, p-cymene and myristicin. Rainbow trout (Salmo gairdneri) hatchery stock and Baltic herring (Clupea harengus) were sampled at regular intervals during the increasing maturation of roe. Mature roe from whitefish (Coregonus albula), burbot (Lota lota), perch (Perca fluviatilis) and roach (Rutilus rutilus) were also examined. Abstract Using gas chromatographic‐mass spectrometric methods 50 fatty acid components of the flesh lipids of a fresh‐water whitefish have been examined in detail. The total lipids represented, on average, 3.0% of the wet weight of whitefish fillets. Volatile carbonyl compounds of arctic brambles at various stages of ripeness were analyzed as their 2,4-DNPH's by a combined TLC-GLC-MS method. Twenty-one different carbonyl compounds could be identified. During the ripening process the content of most carbonyl compounds increased, the largest changes occuring in the amounts of acetaldehyde, pentenal, acetone, acetonn and diacetyl but the content of hexenal decreased.
