高度不飽和リン脂質に富む筋子油の自動酸化挙動をオキアミ油とサケ油の自動酸化挙動と比較した。筋子油とオキアミ油はカロテノイドの一種であるアスタキサンチンとリン脂質を含むため, 30℃の自動酸化に対してサケ油よりもはるかに安定であった。次に, 筋子油とそのトリアシルグリセリン及びリン脂質区分の酸化安定性を同条件下に評価した。その結果, 筋子油中のヒドロペルオキシドの蓄積は筋子油に含まれるアスタキサンチンとトコフェロールの酸化防止効果により, トリアシルグリセリン区分やリン脂質区分中よりもかなり抑制された。それ故, 高度不飽和脂肪酸に富む脂質の自動酸化はアスタキサンチン, トコフェロール及びリン脂質が共存することによって抑制され, リン脂質はトコフェロールに対する相乗剤として作用した。
