ResumoIn this work are presented the results obtained in the study from the nutritional composition of 8 varieties of chestnut from the Region of the Monterrei (SE from Orense), which is an exceptional zone by its volume of production as well as by its quality. The variability among varieties of the principal essential principles was analyzed and compared with the data of the principal Portuguese, French and Italian varieties, finding that the varieties included in this study present a smaller contain in proteins and fats, than the Italian and French more prestigious varieties, while surpassing them concerning its content in saccharose.
