CARACTERIZACIÓN DE TAZA DE CAFÉ ESPECIAL EN EL MUNICIPIO DE CHACHAGÜÍ, DEPARTAMENTO DE NARIÑO, COLOMBIA

ResumoCoffee from 19 farms belonging to the municipality of Chachagui (Narino) was characterized on crop management aspects and cup. Predominant varieties, cropping system, applied fertilization type, weed control method and type of process to obtain the dry pergamino coffee were determined by a survey. In order to establish the cup characteristics, 3 dry pergamino coffee samples per farm were collected to perform the sensory analysis made through 3 Q-Grader tasters, using the Cup of Excellence form to grade cleanness, sweetness, acidity, body, flavor, aftertaste, balance and an overall impression. Results were statistically analyzed by a complete random block design with a 19 x 3 notation (19 treatments or farms and 3 blocks or tasters) using a variance analysis (α = 0,05) to define the differences among the given value from tasters describing the attributes of the drink. It was determined that this municipality has a high cup quality after obtaining an average qualification of 85,3 over 100. Farms with the highest scores were F4 (88,7), F9 (88,4), F17 (88,3) and F15 (88,2) scoring above 6,0 in each of the attributes, indicating the high quality of the drinks.
