Resumo

The hygienic conditions of the work atmosphere and the enforcement of the legal demands are important factors to be considered for the production of safes and quality foods. For being a perishable food, the meat needs the use of conservation methods immediately after the discount. On the present study were analyzed the hygienic-sanitary conditions of establishments that commercialize bovine meat in Joao Pessoa were analyzed. To accomplishment the microbiologic analyses, 10 samples of bovine meat of several establishments were collected at free and public markets. The results of the total counting of aerobic mesofi lic bacteria varied from 2,4x103 MPN/g. Escherichia coli was confi rmed in six samples. In relation to the mould and the yeasts, the values varied from <10 to 9,1x105 CFU/g. The counting of Sthaphylococcus coagulase positive varied from 3,1x103 to 1,8x106 CFU/g. It wasn't detected the presence of Salmonella in any of the samples. The analysis of the results indicated that the commerce of the meat in the free and public markets do not assist to the demands of the Legislation that controls this sector. \F06EKEYWORDS: Meat; refrigeration;
