Efeitos da radiação gama em banana “nanica” (Musa sp., grupo AAA) irradiada na fase pré-climatérica

Resumo

The present work verifi ed the effect of gamma radiation on physical and chemical parameters of banana “nanica”, analyzing possible alterations on the period of conservation and the possibility of commercial irradiation aiming the exportation. The results had demonstrated that the radiations had not produced effect on pH and total acidity. However, the bananas of the “control group” and those that had received 0,75 kGy, had presented greater maturation degree and, radiated with 0,30 kGy, had presented greater fi rmness. In accordance with the results of the organoleptical analysis, can be perceived that the bananas most mature, especially of the “control group”, had had greater acceptance. The bananas of treatments 0,30 and 0,60 kGy had had minors notes for presenting minor maturation stadium. Knowing that the irradiation in adequate dose and fruits of good quality brings benefi ts to the storage and the process of exportation, we conclude that the dose most appropriate for the control of the maturation of the “nanica” banana is 0,30kGy
