ResumoAbstract The influence of temperature, buffer molarity, substrate concentration and organic phase composition on α-chymotrypsin activity encapsulated in reverse micelles of cationic surfactant was studied. The enzymatic activity was measured by the dipeptide AcPheLeuNH 2 synthesis and also by the ester substrate consumption. The enzyme was chemically modified and the effect of this modification upon the enzyme activity was also analysed.
