Resumo

Flotation is nowadays one of most interesting techniques in oenology for the must clarification due to its economic costs in comparison with the centrifugation. This technique allows the possibility of using coadyuvant treatments in the must for concrete purpose. The main factors taken into account in the difference pressure flotation are analyzed. The main treatments with coadyuvants linked to flotation, their effects on the separation process, on must composition, their yield, ant their applications in oenology field are studied.
