
Avaliação das condições higiênico-sanitárias de carne bovina comercializada em supermercados de João Pessoa

ResumoThey were appraised 30 establishments that market beef in Joao Pessoa, it was verifi ed that the chain of the responsible cold for the meat conservation exposed for sale is not being maintained in most of the supermarkets. In 57% of the establishments, n=30, to temperatures of the meat was above 7oC and in 73% the manipulation was accomplished at rooms without climatization. Regarding the physical facilities as walls, fl oor and roof, 73% of the establishments were had been of the legal patterns. In 57% of the supermarkets, the manipulators used some decoration and in 67% there were not appropriate products for the hygienization of the manipulators' hands. The Most probable Number of total coliforms varied from 23 to 2,4x103 NMP/g, average 1,4x103 NMP/g and fecal coliforms, of <3 to 2,4x103NMP/g, 1,6x103NMP/g. the presence of Escherichia coli was confi rmed in 70% of the samples. The medium counting of mesophiles bacterias, was 4,1x104 UFC/g. The result of the counting of molds and yeasts, it varied of <10 to 5,6x104 UFC/g, average 2,5x103 UFC/g. In 50% of the samples, the obtained result was <10 UFC/ g. The result of the counting of Staphylococcus positive coagulase was <100 UFC/g. presence of Salmonella was not detected none of the samples. Although for the Brazilian legislation, the meats where Salmonella was not detected, in 25 grams of the sample are liberated for consumption, in more than 70% of the visited establishments, detect-of an or more irregularities, needing a more effective fi scalization on the part of the offi cial organs
