Resumo

We present the experimental results obtained from spectral analysis of optical imaging processing of fruit ripening banana. The acquisition of multispectral imaging was performed in the visible spectral range through an Acousto-Optic Filter (AOF). It developed a database containing 800 images for each of the 15 days of fruit ripening is to make filtering and learn the parameters that characterize the model of fruit ripening to develop a process of regression and predict Gaussian input the spectral components for the next day of maturation.
