ResumoThe not amylaceous polysaccharides congregate ample classes of polysaccharides such as cellulose, hemi-cellulose, chitin and pectin that are present in the cell wall in plant food cells. The endogenous enzymes of the ruminants do not degrade them, or make it with low efficiency. These elements modify the digestibility, the time of permanence and viscosity in the digestive tract. The biggest problem presenting for these components is the variability of its concentration in the same ones to cultivars of a harvest for another one being necessary a constant monitor. The exogenous enzyme use and the processing of foods can reduce the negative effect caused by the not amylaceous polysaccharide. Keywords: Beta glucan, cellulose, chitin, hemi-cellulose, pectin
