ResumoVitamin B12 is destroyed by the addition of substantial amounts of vitamin C in the presence of copper. Effects of carnosine and anserine, natural water-soluble antioxidants, on the destruction of vitamin B12, were studied. Addition of carnosine (l0mM) effectively repressed the destruction of vitamin B12, but anserine had only weak inhibitory effects.
