An in vitro system for the breakdown of starch granules by mixtures of α- and β-amylase is developed and discussed with reference to information concerning the degradation of starch in vivo. β-Amylase has no action on starch granules and has very little effect on the rate of starch granule digestion by α-amylase. It does, however, affect the product distribution in an α-amylase digest and is considered to attack dextrin intermediates produced by the action of α-amylase on the starch granules.
