ResumoSamples of raw kibe from 19 shops in the central zone of the city of São Paulo were examined. These were examined for Salmonella and Shigella and NMP /g of coliformes and E. co/i was determined in 19 and of enterococci in 15. The high values encountered especially for coliformes and E. coli and enterococci, showed that kibe sold raw to the public can present a risk of intestinal infection.
