ResumoAbstract Aflatoxin production in rough rice inoculated with Aspergillus flavus with an initial moisture content of 18% and 21 %, respectively, was determined three times during a 20-day period. The range of aflatoxin concentrations after 20 days storage was 2430–10643 μg/kg B1 and 205–737 μg/kg B2. Production of aflatoxin was higher at 21% moisture than at 18%, and more aflatoxin was produced at 30°C than at 25°C. Inoculum density was also important, higher initial spore concentration yielding higher amounts of aflatoxin.
