ResumoUtilizing data from the first national survey conducted in 1980–84 to evaluate the real food intake, a reference diet was formulated. This diet, characterized by 130 food items, can be used for the evaluation of constituents or contaminants of concem. In consideration of the geographical differences in food habits, reference diets relative to the main territorial repartitions Italy have also been formulated. With isocaloric food consumptions/intakes, a prevalence in the consumption of animal foods (both protein and fat) was observed in the North Central regions. The opposite holds true for the South, where consumption of vegetable fat and starch prevailed.
