The gaseous products of nitrite incubation with skeletal muscle

Through the use of nitrite with and without labelling to 95% with15N, it has been possible to distinguish both NO and N2O as products of the anaerobic incubation of pig muscle minces with NaNO2 at pH 6.0 in the presence of the broad spectrum antibiotic chloramphenicol. The formation of C2H4 during the incubations was confirmed by gas chromatography and high resolution mass spectrometry and was not associated with contaminating bacteria. The outputs of NO and C2H4 were markedly reduced in the presence of amytal, suggesting that the formation of both was associated with the respiratory chain of the skeletal muscle.
