ResumoThe method developed for the determination of sugars is based on reduction hexacyanoferrate(III) by simple carbohydrates in a strongly alkaline medium at elevated temperature. Changes in hexacyanoferrate (III) concentration are monitored amperometrically with platinum wire electrodes polarized at 200 mV. Sucrose determination requires on-line hydrolysis in hydrochloric acid. The detection sensitivity for different simple sugars and disaccharides and the influence of several interferents were examined. Sucrose and glucose were determined with a sampling rate of 40 h−1 in natural samples from a sugar production process spiked with glucose.
