ResumoThe ingestion of β-glucan, a polysaccharide that is the main constituent of the endosperm cell walls of oats, appears to result in a reduction in serum cholesterol and glucoce levels, and may be of value for those with diabetes and in reducing the risk of developing cardiovascular disease. This review summarizes current knowledge of both the physicochemical properties and the physiological effects of oat β-glucan.
