ResumoHigh resolution 13C-NMR spectra of lipid extracted from the white muscle of Atlantic salmon (Salmo salar) and reference samples of fatty acids including omega-3 (n-3) fatty acids have been recorded and interpreted. Complete assignment of the spectra of docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA) were obtained from T1 measurements and lanthanide-induced shift studies. Attention is drawn to specific olefinic and methylene carbon signals for the n-3, n-6, n-7 and n-9 groups of acids and also individually for DHA, EPA, docosapentaenoic acid (DPA) and arachidonic acid. The findings provide a basis for the use of 13C-NMR in analysing fish lipids.
