DO TERROIR À GLOBALIZAÇÃO: UMA ANÁLISE INSTITUCIONAL COM BASE EM MONDOVINO

ResumoRealizamos, no presente artigo, uma analise do filme-documentario Mondovino, que explora a disputa entre produtores que defendem a globalizacao da producao do vinho e aqueles que defendem o terroir, em paises como Italia, Franca e Estados Unidos. Com base nos fundamentos conceituais da teoria institucional, procuramos analisar por meio desse documentario o campo institucional da producao vinicola nos espacos sociais referidos, destacando as pressoes para mudanca e os elementos de resistencia a ela. A tensao entre o local e o global constitui tanto o cenario do filme-documentario como o locus da analise institucional decorrente. A analise desta tensao foi efetivada a partir da concepcao de dualidade entre os conceitos de persistencia e mudanca institucional, em conformidade com uma perspectiva estruturacionista da teoria institucional. Os procedimentos metodologicos implicaram primeiramente na transcricao literal do filme e na analise de conteudo das falas dos diversos atores sociais. A analise de conteudo foi levada a efeito mediante uso do software Atlas.ti 5.0. Essas analises permitiram averiguar que ha dois grupos fundamentais envolvidos na situacao em estudo: os que defendem o processo de mudanca da maneira de producao do vinho, ou seja, a globalizacao de sua producao, e os que buscam resistir a essa mudanca, persistindo no modelo de producao vinicola que valoriza o terroir . Assim, o uso do quadro de referencia da teoria institucional possibilitou a compreensao de toda uma problematica social do campo da producao de vinho, especificamente no que tange ao processo de institucionalizacao/desinstitucionalizacao de uma pratica social. FROM TERROIR TO GLOBALISATION: AN INSTITUTIONAL ANALYSIS BASED IN MONDOVINO We performed, in the present article, an analysis of the documentary-film Mondovino, which explores the competition between producers who defend the wine production globalization and those who support the terroir, in countries like Italy, France and the United States. Based on the conceptual foundations of institutional theory, we tried to analyze through this documentary, the institutional field of wine production in the referred social spaces, highlighting the pressures for the change and the resistance elements to it. The tension between the local and global is both the scenery of the documentary- film as the locus of the resulting institutional analysis. This tension analysis was carried out from the duality conception between the persistence and institutional change concepts, in accordance with a structurationist perspective of institutional theory. The methodological procedures involved primarily the film literal transcription and the speeches content analysis of the various social actors. The content analysis was conducted by using the Atlas.ti 5.0 software. These analyses tests allowed to verify that there are two main groups involved in the situation under study: those who support the process of change in the wine production way, i.e., its production globalization, and those who seek to resist to this change, persisting in the wine production model that emphasizes the terroir . Thus, the use of the institutional theory table allowed the understanding of an entire social problematic in the wine production field, specifically with respect to the institutionalization/deinstitutionalization process of a social practice.
