ResumoA comparison of the action of an enzyme (chymotrypsin) on a substrate (denatured lysozyme) (a) in solution and (b) adsorbed on kaolinite, at a solid-liquid interface, reveals that the pH optimum for maximum activity is narrower and shifted to a higher pH with adsorbed substrate. This shift was predictable on the basis of the ionization properties of the kaolinite surfaces.
