Chemical composition of meat of rainbow trout (Oncorhynchus Mykiss Wal) from Gornji Ribnik fishpond

Resumo

The work presents the results of investigation carried out during 2001 on rainbow trout (Oncorhynchus mykiss Wal) from salmonid fishpond Gornji Ribnik. The analysis included fishes of different weight ( ⎯x = 76.15 g, ⎯ x = 182.9 g, ⎯x = 252.05 g). The rainbow trout fish was fed on fish feed containing 22% and 28% fat. The chemical composition of meat of rainbow trout ranged between the following limits: protein 14.0-18.9%, water 66.8-75.5%, fat 4.1-15.3% and ash 1.35-1.6%. Depot fat increased proportionally in relation to the energy content in feed, while protein content declined. Proportion of micro-elements in fish meat was within the permitted limits and ranged between: 6.7659-11.148 mg/kg (Fe), 0.5175-0.8296 mg/kg (Mn), 0.005-0.5214 mg/kg (Se), 12.960-38.305 mg/kg (Zn), 0.0667-0.0960 mg/kg (Cd), 0.2675-0.5555 mg/kg (Cr), 0.103-0.9643 mg (Cu), while Ag and Pb were determined in traces.
