ResumoThe article examines the production of brandy in central Chile, in the districts of Quillota, Colchagua and Cauquenes from 1777 census.Culture is detected production of spirits from lees and pomace in central Chile.This implies a clear difference with current practice in northern Chile, which was produced from wine brandy (pisco).This activity was not concentrated but distributed among many small producers.It was a cross-cutting activity to different social sectors distinguished nobles and merchants bold, rich landowners and poor peasants.
