
AVALIAÇÃO MICROBIOLÓGICA E DA ROTULAGEM DE MASSAS ALIMENTÍCIAS FRESCAS E REFRIGERADAS COMERCIALIZADAS EM FEIRAS LIVRES E SUPERMERCADOS

ResumoThis study aimed to evaluate the microbiological quality and the adequacy of labeling information of fresh, refrigerated semi-ready pasta. Forty samples, comprised 24 industrialized and 16 home-made products, were acquired randomly at open market and supermarkets from August to October 2008. Microbiological tests were carried out to determine the Most Probable Number (MPN) of fecal coliforms and Escherichia coli, presence or absence of Salmonella spp., enumeration of psychrotrophic aerobic bacteria, coagulasepositive staphylococci and Bacillus cereus. The labeling information was evaluated according to the standards of Brazilian Sanitary Surveillance Agency (ANVISA), Brazilian National Institute of Metrology, Standardization, and Industrial Quality (INMETRO) and Federal Law n. 10.674/2003. The results indicated that 5% of samples were not according with the standard microbiological regulation. Only 29 samples were labeled and, from that, 86% were in disagreement with at least one of the law parameters evaluated. It is necessary to guarantee the control of the critical points of microbiological contamination at the level of manufacturer and it is also important to observe general rules for labeling of pasta products
