ResumoMechanical poultry killing machines are replacing manual killers. Some processors get excessive “cadavers” and downgraded birds which they attribute to inadequate bleeding. Also, many producers have reduced bleed time from the 90 seconds (sec.) prevalent for years to 60 sec. or less. Broiler blood loss data were collected at 40 sec. and each 10 sec. interval thereafter to 80 sec. in commercial plants with mechanical and manual killers to determine (1) the quantity of blood added to the scald water by shortening a bleed line by 10 sec. increments and (2) the total blood lost in 80 sec. after slaughtering. In the first 40 seconds, the mechanically killed birds lost 36.6 g. of blood per bird while manually killed birds lost 52.1 g. Between 40 and 80 sec. after slaughter, average blood loss was 5.8 g. for mechanically killed birds and 4.8 g. for manually killed birds.
