Resumo

In the Northeast region of Brazil the goats' milk is an important socioeconomic activity, with prominence for familiar agriculture. In Igaci, in the State of Alagoas, the goat milk production comes significantly increasing, mainly due to the social incentives to destine the goat milk to snack pertaining to school as measured to reduce the levels of malnutrition of the population most devoid. Of this form the hygienic attainment of milk if constitutes in basic item it alimentary security. During it milks the goat milk can be contaminated with diverse microorganisms, also pathogenic. With the objective to contribute with the improvement of the quality of this product and to divulge the reality of an ignored region of Brazil, the proposal of this work was to diagnosis the knowledge of the practical hygienic-sanitary in the operations of milks in producing milk country properties of goat of the Region of Igaci - AL. Qualitative boarding was applied in accordance with the methodology of the Speech of Subject Collective (SSC) whose answers had been recorded, transcribing and analyzed. The individual analysis of the speeches showed that the interviewed ones presented experience in milk of animals acquired with and without previous formal training, like this activity and desire to learn more on the craft. They have little notion of the necessity of hygiene in milks, and possess few information on the illnesses transmitted for milk.
