ResumoThis study aimed to determine the rheological integral to the pulps and centrifuged ( phases 1 and 2) umbu under 10, 20, 30, 40, 50, 60, 70 and 80 oC and jellies in 20oC, produced by umbu COOPERCUC- Agriculture Cooperative Family Canudos , Uaua and Curaca, Bahia and the ACOPRI – Community Association of Rural Produces of Icozeiro, Pontal Project, Petrolina-PE. The rheological behavior were determined by a rotacional viscometer or rheometer concentric cylinders Therms Haake DC 10, (model VT 550). The rheological models of Ostwald-de Waele, known as power law, Hershel-Bulkley, Casson and Binghan were adjusted to rheograms constructed from the experimental data. We used umbu centrifuged and separated into two phases: liquid and puree, wich showed non-Newtonian behavior. Jellies studied too showed a non-Newtonian. The most suitable model to describe the rheological behavior of the studied products was the Herschel-Bulkley, with coefficients of determination (R 2 ) greater than 0,92
