ResumoFood has a definite role in the initiation and advancement of dental caries. A number of early investigators recognized that food had an effect in the development of tooth decay; however, it was not until this century that food properties and components that contribute to dental caries have been identified and investigated. Many factors influence the cariogenic potential of foods, which makes ranking cariogenic potential quite difficult. This article highlights the slow historical recognition of the role of foods in the caries process, emphasizing current research and implications for the dietitian.
