
DIAGNÓSTICO DAS CONDIÇÕES HIGIÊNICOSANITÃRIAS E MICROBIOLÓGICAS DE EMPRESA FORNECEDORA DE COMIDAS CONGELADAS LIGHT NA CIDADE DE BELÉM/PA

ResumoModern life, with its quick rhythm, have modifi ed the alimentary habits of the population, and consequently increased the demand for good quality and easy-to-consume meals. Industries have developed new products to respond to the market demand, such as light and frozen foods. Alming to evaluate the hygienicsanitary conditions and the use of in standard Brazilian production in one company of the Belem city, lectures had been done to the food handlers during the process. Two inspections were realized during two periods (1o and 2° semester of 2008), using Brazilian standard (RDC no 216, of 15/ 09/ 2004) for food production. The use of Brazilian standard was evaluated and microbiological analysis were performed for 30 samples, from six different inspections, being 5 of yakissoba, 5 of regional paraense chicken, 5 of fi let with madeira sauce, 5 of canja, 5 of beans soup and 5 of crab soup. Analysis was made following the standard of Brazilian law and using the methodology described in the “Compendium of Methods for the Microbiological Examination of Foods”. The data of the standard use allowed to classifying the company as “regular”. Microbiological analysis demonstrated that 100% of the samples are without Salmonella sp., Staphylococcus coagulase test was positive, Bacillus cereus and Clostridium reduce sulfi te at 46oC. Nevertheless, it was confi rmed the presence of coliformes at 45oC for all samples and 50% were out of the required standard what indicated that the hygienic-sanitary conditions are improper for food production
