Resumo

Through physical and chemical procedures 721 honey samples were analyzed, for quality evaluation and fraud detection. The samples were sent to the Laboratory of the Centro de Apicultura Tropical by beekeepers, traders and consumers, from several States (68.3% from Sao Paulo, 9.9% from Minas Gerais, 8.1% from Santa Catarina, 3.8 from Parana, 2.8 from Rio de Janeiro and 7.0% from other States). On the whole, 67.8% of the samples presented all quality characteristics within legal range. Most of the rejections were due to Fiehe reaction positive (18.4% of samples), HMF (hidroxymethilfurfural) over the legal limit of 40 mg/kg (5.5% of samples), and the same. for water content over 20% (6.2% of samples). This results show that the main limitation for better Brazilian honey quality lies on the inadequate current technology of honey processing and, besides, points to the fundamental necessity of to harvest honey only when fully matured as the inobservance of this requisite leads to a quick depletion on honey quality.
