ResumoThe carrying support and the development of the local tourism involve different looks on its dimensions in the area where it occurs. This study examined in a systematic way the sustainability of tourism in the Northeast - Brazil, region of Xingo: the resources tourist and local gastronomy. The study area covers three districts: Poco Redondo and Caninde do Sao Francisco at Sergipe and in the state of Alagoas at Piranhas. This research was exploratory and descriptive with the aim to prepare diagrams causal loops in order to produce and select sustainability indicators. The assessment systemic tourist of sustainable showed that Surubim Pseudoplatystoma corruscans (Spix & Agassiz, 1829), Pitu (Macrobrachium carcinus (Linnaeus, 1758) and Tubarana Salminus hilarii (Valenciennes, 1850) were the typical fishes of the region that sold more, but the surubim and tubarana now are dependents extern on distributors. There is positive pressure to fish of the shrimp Pitu, which is greatly to tourism. The ecological dimension showed that the fish reduction could be due the dam of UHE-Xingo and overfishing. The select environmental indicators aimed necessity of the establish information system concerning the fishing production and consumption in the restaurants
