ResumoObjective: To evaluate the purchase intention and acceptability of different types of milk plant.Methods: The study presents a quantitative character, cross-sectional and descriptive.The sample was composed of 381 participants of both sexes, with age between 20 to 59 years, the city of Várzea da Palma -MG, located in the North of Minas Gerais.For obtaining the results applied socioeconomic questionnaire, accession of the milk plant, hedonic scale, purchase intention, in addition to assessing the nutritional diagnosis of the population treated.Results: It appears that 26,5% of the respondents consume the milk plants with a focus on health and include them in their diet, while 19,1% of the respondents consume for some reason of health.When evaluated the frequency of consumption, it is observed that 34.3% of interviewees did not consume, but has an interest, and 20,1% consume with a higher frequency in the week.The test of acceptability of milk plants in the flavors of almond, coconut rice and soybeans, it is observed that the rice milk showed greater acceptance with 69.5%.Regarding the intention to purchase, the coconut milk even presenting good acceptance would not be purchased according to the interviewees (77.2%), followed by the almond milk.
