University Restaurants are food and nutrition units that act as important tools in student assistance, in which it is relevant to evaluate the customers' opinions regarding the meals offered through satisfaction survey.The objective of this research was to evaluate the satisfaction of users of the university restaurant of the Federal University of Jequitinhonha and Mucuri Valeys through a satisfaction questionnaire, relating degree of importance to the degree of satisfaction.The research had as participants 200 clients, and most of them were students of the university.For more than 80% of the users, cleaning, service, price, variety and menu are the most important attributes.However, a higher percentage of satisfaction was achieved for form of payment, cleaning, attendance, comfort and lighting *.Lower percentage was satisfied with the menu and with the variety.Greater dissatisfaction was verified with the price and the location.About 79.5% intend to return to the restaurant and most have been in the indecisive range about recommending the restaurant to a friend.It was concluded that some attributes require investments and adjustments by the food supply company, such as menu, variety, temperature and taste of food to obtain a higher level of customer satisfaction.Other aspects such as price and location demand reflections from the university itself in order to find investments for the subsidy of food and construction of the definitive RU of the university, better located.
