ResumoespanolEsta investigacion esta orientada al aislamiento y caracterizacion de bacterias Pseudomonas sp. a partir del efluente de las aguas residuales de 04 restaurantes de la ciudad de Cusco, Peru. La seleccion de dichos restaurantes se realizo por la gran demanda de comensales y su red de desague aislada solo para la cocina. Se aislo Pseudomonas sp. de las aguas de los restaurantes con la tecnica que recomienda la Asociacion Americana de Salud Publica. Se realizo la caracterizacion morfologica, tincion Gram, las pruebas de oxidasa, catalasa, fluorescencia de luz ultravioleta y licuefaccion de gelatina. Como resultado se caracterizo 16 colonias del genero Pseudomonas, de las cuales 16 presentaron coloracion Gram negativa, 13 colonias presentaron reaccion a catalasa, oxidasa, licuefaccion de gelatina y fluorescencia positiva. Se concluye que las bacterias del genero Pseudomonas se encuentran distribuidas en las redes de desague propias del efluente de la cocina de restaurantes. EnglishThe research is aimed at the isolation and characterization of Pseudomonas sp bacteria. from the wastewater effluent from 04 restaurants in the city of Cusco, Peru. The selection of these restaurants was made due of the high demand of diners and its isolated drainage network only for the kitchen. Pseudomonas sp. of the waters of restaurants with the technique recommended by the American Public Health Association. Morphological characterization, Gram staining, oxidase testing, catalase, ultraviolet light fluorescence and gelatin liquefaction were performed. As a result, 16 colonies of the genus Pseudomonas were characterized, of which 16 had Gram-negative coloration, 13 colonies had reaction to catalase, oxidase, gelatin liquefaction and positive fluorescence. It is concluded that bacteria of the genus Pseudomonas are distributed in the drainage networks of the restaurant kitchen effluent.
