Resumo

Growth traits of fattening lambs were studied in Churra Tensina breed. The effect of sex was significant (p < 0.01) on average daily gain (ADG) for the period lambing-90 days of age. Duringthe period 90-120 days of age ADG was lower than the observed in the period 30-90 days (98.66 g and 259.90 g, respectively). Fattening light lambs were slaughtered at 2 1.99 kg and the fattening light-heavy lambs had a slaughter weight of 26.85 kg. Fattening light lambs had significant (p < 0.05) less internal fat and lower comercialand slaughter carcass yields than fattening light-heavy lambs (1.73%, 47.51 %, 49.18% and 2.08%, 48.76%, 50.28%, respectively). Fattening light lamb carcasses had significantly more (p < 0.001) muscle and bone but less (p< 0.001) fat than fattening light-heavy lamb carcasses (62.54%, 19.25%, 18.20% and 61.12%, 17.22%,21.60%, respectively). Meat of fattening light-heavy lamb was darker (p <0.001) than fattening light lambs meat (37.88 ppm of Fe hem. and 61.12 ppm Fe, hem., respectively). Differences for tenderness (9.10 Lblcm vs 8.90 Lblcm) and water holding capacity (14.59% expeled juice vs 15.56% of expeled juice) were no significant.
