Resumo

Zearalenone (ZEN) is a type of estrogenic mycotoxin produced by the fungi of Fusarium genera, which contaminates foods and feeds. It has many adverse effects on mammals such as disorders of the hormonal balance of the body. ZEN can enter the food chain through contaminated food such as cereal crops. It has been found in maize germ oil too. In this research, an economic and simple analytical method of ZEN detection in maize oil with no clean-up was developed. ZEN in maize oil samples was extracted with n-hexan and mixtures of methanol/ammonium carbonate and determined by high-performance liquid chromatography with fluorescence detector (HPLC-FLD). The recovery rates were between 75% and 120%, while relative standard deviations (RSDs) were lower than 5%. Also refined maize oil samples from different brands were collected from Tehran market for ZEN determination by this method. Among 20 samples analyzed ZEN was detected in 11 samples (55% of the total) and ZEN was not found in 9 samples, but all the results were lower than maximum limit of ZEN set in Iranian national standard as well as lower than maximum level of EU for ZEN (400 ng/g).
