Resumo

This research work was carried out with the objective of assessing; L. monocytogenes,Salmonella spp. and coliforms in Paraguay cheese marketed in different sales points of the cities of;Jose Falcon, Benjamin Aceval and Villa Hayes of the Presidente Hayes Department. A total of 24samples of cheese Paraguay were obtained, which were analyzed following the ISO 4831:2006; ISO4832:2006; ISO 6785/IDF 093:2001 and ISO 1190-1 methods. This study revealed that 100% werenegative for Listeria monocytogenes and for Salmonella spp. However, coliforms were found in 87%of the samples, of which 15 (62% of the total) presented coliform counts above the maximumallowed by the Paraguayan Standard NP 25 053 11, on the other hand, 6 samples (25% of the total)had a coliform count within the values established by the standard. In order to confirm E. coli,isolation of presumptive colonies were culture and confirmatory biochemical tests were carried out,which revealed that 9 (38%) of the Samples were positive for E. coli.
