Resumo

Sugarcane juice is a popular beverage, highly appreciated by the Brazilian population. The aim of this study was to describe food habits and preferences, to know about the knowledge on safety conditions, the opinion about sugarcane juice sells points, the commercial acceptance and the availability to pay add values for the processed and packed sugarcane juice, through the application of 350 questionnaires in six Sao Paulo cities. Among the interviewed people, more of the half one (51%) said that had food safety habits; (59%) were interested in its habitual food safety and (63%) care about street foods. Snacks had been cited as foods as routinely consumed. Among the interviewed ones, 80% had mentioned to appreciate sugarcane juice and their preference for the consumption with lemon juice addition. About 55% of the interviewed ones had mentioned that they would consume more sugarcane juice processed and packed. The average availability to pay more was of R$ 0,54 cents, evidencing that the processed beverage would have good commercial acceptance
