ResumoMarket trends lead to higher standards for better quality in agricultural products that ensure nutritional and food security.Important advances have been achieved with Geographical Indications (GI), which indicate predetermined quality standards, and thus may constitute an appropriate option for rural activities based on sustainability criteria.This paper aims to describe the registration process of the Indication of Source "ESPÍRITO SANTO" for Conilon Coffee produced in Espírito Santo.Conilon coffee, grown in small, medium, and large farms spread throughout the territory of Espírito Santo, has become one of the most expressive local economic and social activities.Conilon coffee farming represents a significant factor in the history, culture, and economy of many cities in Espírito Santo.The production, associated with productivity, places the state of Espírito Santo in a national and international prominent position.The geographical area for the production of conilon coffee with this Indication of Source corresponds to the geopolitical limits of the state of Espírito Santo.Those who will use the Indication of Source must comply with Good Agricultural Practices.They must submit the coffee to organoleptic evaluation.The certification for the conilon coffee product as an Indication of Source may promote regional development and provide local cultural changes capable of favoring the expansion of interactions between the coffee growers involved and the other links in the chain, making the productive environment increasingly fruitful.
