Structural parameters including core radius, aggregation number and interfacial area per surfactant head group of aqueous phase/surfactant phase/peppermint oil systems have been estimated. The surfactant phase includes single sugar ester surfactant or sugar ester surfactant mixed with a cosurfactant or sugar ester surfactant mixed with another surfactant. The sucrose esters were sucrose laurate, sucrose myristate, sucrose palmitate, sucrose oleate and sucrose stearate. The phase behavior at 45°C was explored to determine the extension of the microemulsion phase regions. Minor changes in the surfactant chain length, structure and composition, sugar ester surfactant/cosurfactant mixing ratio, and sugar ester surfactant/PEG-7 glycerol cocoate surfactant provoke a significant change in the structural parameters. The core radius and aggregation number increase with the increase in the aqueous phase content in water-in-oil microemulsions. The core radius and aggregation number depend on the surfactant/cosurfactant or surfactant mixing ratios. The interfacial area per surfactant head group depends on the molecular volume of surfactant and cosurfactant. For a sucrose ester with a given chain length, the interfacial area per surfactant head group decreases with the surfactant monoester content. The interfacial area per surfactant head group increases with the water core volume. The interfacial area per mixed surfactant head group depends on the surfactant mixing ratio.
