ResumoThe present study aimed to evaluate the physical-chemical, microbiological and microscopic quality of one brand of frozen fruit pulps marketed in the city of Recife, Pernambuco (BR), and their results compared to the standards established by current legislation.Analyzes were carried out on five flavors of frozen fruit pulps: guava, cashew, soursop, caja, and passion fruit.The physicochemical analyzes were evaluated regarding the following parameters: pH; titratable acidity; soluble solids; total solids and total sugars, microbiological analyzes (coliforms at 35ºC and 45ºC, Salmonella spp.and molds and yeasts), and microscopic analysis.The results of the physicochemical analyzes indicated that, according to legislation, 100% of the samples presented lower values in at least one of the evaluated parameters.In addition, all flavors tested had total solids values below the minimum recommended by law.Regarding the microbiological analysis, none of the samples showed coliform enumerations at 35°C and 45°C, nor the presence of Salmonella spp. in 25 g, also checked low mold and yeast counts.Microscopic examination showed a high incidence of foreign biological material among the evaluated flavors.Given the profile outlined in this study, the implementation of good manufacturing practices by the industry of the evaluated brand is recommended, ensuring quality products and within the standards established by legislation.In addition to the more effective action of inspection authorities in order to restrain possible irregularities detected in this sort of product.
