Resumo

The old studies of Philippe Wolff (1954) and Gilles Caster (1962) established a chronology and a geography of the production and marketing of pastel which made Toulouse the hub and the middle of the 15th century the starting point. According to innumerable notary registers and estimate books, it is possible to readjust the rhythms to highlight a production that was already alive in the 14th century, and above all to shift our gaze to recognize the role of small towns, such as Castelnaudary. These are active centers, capable of exporting directly to the distant markets of Catalonia or Bordeaux, without necessarily passing through the relay of Toulouse merchants. This article thus proposes to take a fresh look at this history.
